Salmon Cobb Salad with Smokey Coconut Chips

I'm always on the hunt for a good lunch option that's both nourishing and satisfying, and I just want to say...I FOUND IT! This Salmon Cobb Salad with Smokey Coconut Chips is absolutely delicious and a great way to spend your lunch break eating. You hungry for something satisfying? Let's dive in!

I remember the first time I had Cobb Salad. It was one of the school lunch options everyone hated!Slimy ham cubes, shredded waxy cheese, semi discolored eggs. Yeah, not the greatest memories.

I think because of those first couple experiences with Cobb salad, I forget about it and that, when not served in a styrofoam bowl, it's actually delicious! Especially with juicy salmon on top, as is in this case!

What I love most about this salad is how incredibly SATISFYING it is. With the salmon and avocado and boiled egg with creamy blue cheese...you have all you need to feel good about lunch!Let's talk a little about why being satisfied by a meal is so important. You've probably heard me talk about this before, but satisfaction is so important when deciding how to create a healthy meal. But it's often ignored. If you're never feeding yourself satisfying foods, you'll more often than not find yourself over eating. But if you're eating foods that "hit the spot" as some people say, you'll be less likely to keep scrounging around for more to try and satisfy you.That's what this Cobb salad did for me...and I know it'll do it for you!

On this salad you'll find the basic Cobb ingredients such as egg, avocado, tomato, and gorgonzola plus two more unusual ingredients including broiled salmon and smokey coconut chips.I chose to top this salad with these stovetop smokey coconut chips instead of bacon, not as a bacon substitute or because there's anything wrong with bacon. I just liked the idea of switching things up and thought the flavor combo would be tasty and a nice balance with the fatty salmon. But, if you want to use bacon you definitely can!

Here's a couple of things I love about this salad:It's got lots of toppings.It's colorful.It's filling.It's satisfying.

Salmon Cobb Salad with Smokey Coconut Chips (makes 4)

1 lb fresh salmon 

salt

pepper

4 large handfuls of spring mix, divided into 4 bowls

1 avocado

2 tomatoes

4 boiled eggs

1/2 cup crumbled gorgonzola 

2 green onions, sliced

1/2 cup flaked coconut

1/4 cup olive oil

1 tsp soy sauce

1 tsp Sriracha

1 tsp smoked paprika

1/2 tsp honey

salt 

Start by broiling your salmon. Season with salt and pepper and then broil on high for 10-15 minutes or until flakey. Next boil your eggs until firm inside (about 12-14 minutes). Lastly, prepare your smokey coconut chips. In a small bowl, combine coconut, olive oil, soy sauce, Sriracha, paprika, honey, and salt and stir to coat coconut. Then place in frying pan on medium heat and cook until the coconut begins to crisp. Allow to cool and set. Finally, prepare your salad. Divide lettuce between 4 plates, top each with 1 sliced boiled egg, 1/4 of the salmon, avocado, tomato, gorgonzola, and lastly the coconut bacon. Sprinkle on the green onion and enjoy!
