Healing Veggie-Packed Miso Soup

When you're under the weather, or maybe on the verge of feeling sick, this healing veggie-packed miso soup is the perfect soup for upping your defenses against illness. But also, it's the perfect soul-warming soup on a cold day when you want something full of veggies and so satisfying. Here we go, healing miso soup. I plan on seeing a lot of you this winter!I don't know why I don't make this soup more often. It's so darn easy to put together and is probably one of the most satisfying soups I've had! Oh, yeah...this and my soul-warming Red Lentil Soup. That one's good too!

And, aside from being absolutely delicious, this soup is packed with immune boosting ingredients including miso, garlic, bok choy, and mushrooms to help your body naturally fight illness.

Miso--fermented soy that helps promote good gut bacteria which increases defenses against illness. 

Garlic--contains compounds that boost disease-fighting responses in the body. 

Bok choy--contains high levels of vitamin A that is essential for a properly functioning immune system.

Mushrooms--inhibit viruses and decrease intensity of sickness.  

The best part of this miso soup...from start to finish this soup will be on the table in less than 20 minutes! If you haven't noticed, I'm a sucker for quick-cooking recipes. So here you have it, delicious and nutritious soup easy and fast to make.  The tofu adds a vegetarian protein boost, and the soba noodles complete the soup with satisfying carbohydrates.

Healing Veggie-Packed Miso Soup

4 cups low-sodium vegetable broth

2 bulbs baby bok choy

1/2 block cubed extra firm tofu

3 Tbs white miso paste

1 cup sliced white mushrooms

3 cloves minced garlic

2 scallions, sliced

6 oz soba noodles

sesame seeds

Over high heat, warm broth and miso paste, stirring to combine. Bring to a boil, then add in soba noodles. Once boiling, reduce heat to medium. Add in tofu, mushrooms, bok choy, and garlic. Warm until bok choy is wilted and mushrooms are soft. Dish out, top with scallions and sprinkled sesame seeds.
