Soul-Warming Red Lentil Soup

It's soup season. And officially the first day of winter. This Soul-Warming Red Lentil Soup is something I first created last year and it's been a favorite ever since. I love that it's so light but hearty all at the same time. And it's always satisfying! That's why I thought I'd share this family favorite of ours, so you can enjoy it too!

I first had red lentil soup at a little Israeli restaurant down the street from my job. The first bite had me hooked! Such a savory and soul-satisfying soup to warm from the inside-out. And God-knows this Southern-raised girl needs that here in NY! After that first try, I knew I had to recreate it for myself! One thing that I distinctly LOVE about this soup is the tang of lemony citrus that it has with each bite as well as the richness that the olive oil adds. These two ingredients are MUST HAVES! This soup is perfect for a cold winter day, sitting at home by a fire (or in our case watching the fireplace videos on Netflix) and cuddling with someone you love. You'll for sure be warmed from the soul!You can enjoy this lentil soup on it's own or with a dollop of greek yogurt (yes it's amazing!) and some chopped fresh parsley on top. Also, a must have is a side of toasted naan bread for dipping (not pictured but needed!).

Soul-Warming Red Lentil Soup

1/4 cup extra virgin olive oil

1 onion

2 large carrots

2 sticks of celery

3 cloves of garlic, minced

1 tsp cumin

3 Tbs curry powder

1/4 tsp cayenne pepper

1 tsp salt (more to taste)

dash of pepper

2 cups rinsed red lentils

6 cups vegetable broth

1/2 cup lemon juice + zest of 1 lemon

  1. Dice onion, celery, and carrot finely and add to a large pot along with olive oil and cook on medium heat until soft and onion is browned. 

  2. Add in garlic and spices and stir until aromatic.

  3. Next add in lentils and stir to incorporate before adding in the vegetable broth.

  4. Bring to a boil, then once boiling, turn heat down to medium low and allow to simmer.

  5. Simmer for 30 minutes, stirring occasionally, until lentils are soft.

  6. Serve with a dollop of greek yogurt and chopped parsley if desired, and pair with Naan bread for a complete meal.
