Show Yourself Some "Love" Muffins

Hey "love muffin", whatchu doin? Hopefully getting ready to make the best muffins EVA with me today. Because that's what these are...best muffins EVA! And with Valentine's Day just around the corner, I thought I'd share some love with you by sharing one of my favorite muffin recipes of all time...the "love muffin"!

Ah, the love muffin. Let me start out with a brief history of this delicacy...it all started a couple of years ago when I walked into a cafe in Greenville, South Carolina with a friend on the week of her wedding and she told me about their muffins."You've gotta get their love muffin!"  Wait, what? The muffin is literally named a "love muffin"?

I took her advice and ordered this renowned muffin, and wouldn't you know, it was absolutely AMAZING! Quite literally has left an imprint in my mind to this very day, it was that good! So what would any obsessed person do in this case? Uh, remake it...duh!  I don't know how they made their muffins. All I know is that the best part of them was the fact that they had a raspberry preserve filling. A little "pocket of love" as I like to say. The bran muffin combo with raspberry preserves...to die for!  What better way to start your Valentine's (or Galentine's) day than by cuddling up to breakfast in bed with some warm love muffins! Oh yes, that's what I'm thinking!  

To make these muffins is super simple. Simply prepare the batter, fill the muffin tin up halfway with batter, then add a dollop of the raspberry preserves (you can use any preserve, but raspberries are so delicious in this recipe...but if you want an alternative, maybe try strawberry or another fruit! I bet fig would be really tasty too!). Then top off each muffin with more batter and bake. Allow to cool a little before eating and enjoy!  I hope you love this recipe as much as I do.

Love Muffins

1/2 cup boiling water

1/2 cup oat bran

1/3 cup coconut oil, melted

1 egg

1 1/4 cup milk 

1 1/4 cup all purpose flour ( i use white whole wheat)

1/2 cup sugar

1/4 cup brown sugar

1 tsp baking powder

1 tsp baking soda

1/2 tsp salt

1 1/2 cup additional oat bran 

raspberry preserves

Preheat oven to 375 degrees. Prepare a muffin tin by spraying with non-stick spray. Pour boiling water over oat bran, allowing to soften. Once cool add in oil, egg, and milk. Next combine dry ingredients: flour, sugar, brown sugar, baking powder, baking soda, salt, and additional oat bran.Mix wet and dry ingredients until just combined. Now, spoon in 1 or 2 spoonfuls of batter into each muffin tin space. Place a dollop of raspberry preserves on top and then spoon another 1-2 spoonfuls of batter on top of preserves so that the jam is inside. Bake for 20-25 minutes until toothpick comes out of center clean (there may be some signs of the raspberry preserve on it, but you shouldn't see any of the wet batter). Allow to cool on a rack for 10 minutes before enjoying!
