Gingerbread Energy Balls

Hi friends! Sharing another recipe with you guys today. And this is one that I've been dying to share with you. Why? Well, because it's so easy to make, and also, eating energy balls is so fun! I made these "gingerbread inspired" because...well, it's Christmas time and that means gingerbread is taking over for pumpkin from October. So here it is...my Gingerbread Energy Ball Recipe!

Around the holidays it can get a little crazy, for sure! You've got gifts to buy, maybe you're doing some service projects around your community, and of course, tons of Christmas parties to attend! It can get wild if you're not careful, and eating mindfully and responding to hunger can be somewhat difficult.

That's why I love to keep snacks readily at hand for those moments where I'm out running errands and NEED a pick-me-up to tide me over to the next meal. These Gingerbread Energy Balls, though amazingly festive, are also a super practical snack that you can keep with you on the go!They're made with very simple ingredients, most of which you probably already have lying around your house, and can be made in literally 5 minutes or less. Equipment wise, you only need a food processor or blender and you're good to go!These balls contain so many nutritious and filling ingredients including walnuts, raw old fashioned oats, and dates. Then molasses and some spices give them the gingerbread taste we all love.

 Here's the recipe:Gingerbread Energy Balls

1 lb of pitted dates

1/2 cup walnuts

1 cup old fashioned raw oats

1 Tbs molasses

1 tsp cinnamon

1 tsp ginger

1/2 tsp nutmeg

1/4 tsp cloves

pinch of salt

  1. Combine all ingredients in a high speed blender or food processor and mix until a dough forms. You may need to scrape down the edges a few times to get it nice and mixed consistently.

  2. Next begin rolling out your balls on parchment paper, however big or small you prefer.

  3. You can store these in the refrigerator, or just dig in right then and there!
