Fish Tacos with Mango-Jalapeno Salsa

Hello!!! Sharing my favorite recipe lately with you guys! I created these fish tacos with mango-jalapeno salsa a couple weeks ago just out of trying to use what we had in the fridge...and O.M.G! They turned out sooo amazing that I had to recreate them. And then I decided I just couldn't go without sharing them with you!So...how's it going?

It's been a pretty good week so far for me. I worked Monday and Tuesday at my pediatric nurse job and then Wednesday I was off as usual...well, off but working on business stuff and coaching clients, etc. So not really off, but this stuff brings me such great and amazing joy. So I don't really see it as work.          

I was talking to a client today about changing our mindset around food and focusing on the culture that food can bring us and the joy that that relationship can bring us when we truly tap into all that food really is. You see, food is so much more than just something we eat. It's so much more than just fuel...more on that another day.

But also, there's so much benefit nutritionally, physiologically, psychologically that comes with the culture of cooking food.I wasn't always cooking in the kitchen. And cooking wasn't always a pleasurable experience. You see, growing up my mom would have me help her in the kitchen with dinner every night. And though I loved the idea, there was a lot of fear round cooking and some strife that came up with cooking around my strict guidelines that I had with food.

But now, having a healthy view of food, and knowing what real health looks like, cooking is part of my own health practices! And I find such enjoyment out of trying a new recipe. And not just one that's labeled #paleo #glutenfree #lowcarb and #clean.No, I'm not always in the mood to cook. And many meals lately have consisted of pulling out a Trader Joe’s meal from our freezer. But there's something to taking time to prepare a meal, smelling all the smells as the food cooks, and priming your body for digestion and nutrient absorption. You don't get that from microwaving frozen meals or driving through the fast food lane. Just saying.

So, yeah, hoping to get back into the swing of things with cooking now that life is slowing down a bit...I think. And if it's anything like this meal, I'll be happy!Hope you enjoy these delish, fresh, summery, and light tacos! 

Fish Tacos with Mango-Jalapeno Salsa

Makes: 4 servings            Prep & Cook Time: 30 mins

4 filets of tilapia, fresh or frozen

1 1/2 tbs smoked paprika

1 tbs garlic powder

1 tbs onion powder

1 tbs ground dried thyme

1 tsp black pepper

1 tsp freshly ground salt

1 tsp cayenne pepper

1 tsp dried basil

1 tsp dried oregano

1 mango, diced

1 jalapeno, de-seeded and diced

1 tbs finely chopped cilantro

1 tomato, diced

sliced cabbage

lime

8 corn tortillas

If using frozen tilapia, defrost in warm water. While fish is defrosting, prepare blackening seasoning by combining paprika through oregano. Stir to combine. Now prepare the salsa by tossing together the diced mango, jalapeno, cilantro, and tomato. Once tilapia is defrosted, pat dry with a paper towel. Preheat a frying pan or cast iron skillet on medium heat and pour in about a tablespoon of a high heat oil into the pan ( I used grapeseed oil). Rub an ample amount of the blackening seasoning on each side of fish and place in pre-heated frying pan. Cook for approximately 5 minutes each side, or until flaky. Remove from heat. *Optional: prepare corn tortillas by placing directly over gas grill flame to warm and slightly char tortillas, but be careful not to burn. To prepare tacos, place a chunk of fish in corn tortilla, top with salsa and some of the sliced cabbage. Squeeze some lime over tacos and then enjoy :)
