Burrito Bowls with Avocado Tahini Sauce

Bringing you guys a meal I've been meaning to post for a while now...burrito bowls! These bowls are such a great easy dinner made in 20 minutes or can be used as a meal prep item for a week of prepped lunches. A little different from your typical burrito bowls, these are topped with an avocado tahini sauce. Because tahini is good for EVERYTHANG! Even burritos! Let's dive in!

Ok, so who out there's a Chipotle fan? Back in my college town we had this other wannabe chipotle called "Moe's Southwest Grill". You were either team Chipotle or team Moe's...and I, for sure, was team Chipotle!

Moe's had free chips, I will give that to them. But Chipotle! I love how fresh everything is and the cilantro lime rice and all that goodness! Fresh sure does taste good, right?! I have a little trick for you, too, you guacamole lovers...

I know Chipotle charges extra for guac, but my secret is...if you can do without eating meat for a meal...go vegetarian and just do beans because you'll get guacamole included in your burrito, salad, or bowl! Genius right! I'll choose guac over meat any day...but that's just me. Ok, so because I'm a tex mex fanatic! And because burrito bowls are, like, the easiest dinner in the world, I thought I'd share with you a burrito bowl recipe for you to be able to make your own bowls at home. Also, I mentioned, these are super fast to make...which in my book is a winner because I oftentimes either don't have time to spend a lot of time on dinner or I just don't want to spend a whole lot of time on dinner and would rather be sipping margaritas as I wait the 20 mins for this rice to cook before being able to assemble everything for dinner. Done!So, a couple of things about this recipe...

First we start with a layer of some steamed kale. Basic. Nothing to it. I just put some kale in the microwave with some water for 30 seconds and it was done! If you don't like to use a microwave or don't have one, you can do the steaming the old fashioned way. I, however, only have one pot and that pot was going to be preoccupied with cooking rice so microwave it is!

Second, on top of the kale is piled some rice and beans cooked with some cumin, garlic powder, and chili powder. This, along with the kale, is the base of your bowl.

Topped on the bowl are any desired toppings you want. But what I did here were some diced tomatoes, sliced red onion, fried plantains, and sliced jalapeno with cilantro on top. To finish the bowl, an avocado tahini dressing is drizzled on top. Sauce always ties a meal together and makes it more satisfying!

Burrito Bowls with Avocado Tahini Sauce

Serves 4                   Prep & Cook Time: 20 mins

4 cups of kale, chopped and de-stemmed

1 cup brown rice

2 15 oz can black beans

1 tsp cumin

1 tsp garlic powder

1/2 tsp salt

2 tsp chili powder

2 tomatoes, diced

sliced red onion

2 plantains, peeled and sliced

1 jalapeno

cilantro

For the sauce:

1 avocado

1 Tbs tahini

2 Tbs lime juice

1/2 tsp salt

1/2 tsp garlic powder

1 jalapeno

5-6 Tbs water

Directions:

Start by preparing the rice. Cook dried rice with 2 cups of water or broth, simmering until water is absorbed. Just near the end of cook time, add in the beans and spices. Stir to incorporate.

Next steam your kale. You can steam in a pot, or do as I did and just use the microwave by putting kale in a microwave safe bowl with a 1/4- 1/2 cup of water for 30 seconds. Lastly, prepare your plantains. Cook in coconut oil or another high heat oil, browning on each side until crispy.

Now to prepare your bowls...start with layering your steamed kale on the bottom. Next add in your rice/bean mixture. Top with a couple of the plantains, tomatoes, red onion, sliced jalapeno, and cilantro.

Make up your avocado tahini dressing by combining all ingredients in a high speed blender or food process and blend until smooth. Drizzle over bowls to complete. Enjoy!
